Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew. We name these beers in sequence - their numbering first indicates the year in the Trillium lifespan that the beer was released, followed by a recipe indicator. Permutation 6.01 celebrates our Sixth Anniversary by showcasing the agricultural bounty of the New England region. The malt bill is made up exclusively of grains grown and malted in the six states, and our hops of choice were Four Star Farms' Centennial varietal. This recipe is quite similar to The Six States - our other anniversary stout - however, Permutation 6.01 forgoes any adjuncts and comes in at a modest 3.2% ABV.
The beer pours an entrancing shade of dark brown, with a touch of haze when brought to the light. Cocoa, coffee and roasted nut aromas leap from the glass and lead into the first sip. On the palate a touch of baker's chocolate melds with notes of molasses, brown bread and espresso. With a smooth body that isn't overly full, we find ourselves going back for sip after sip.
