We name these beers in sequence - their numbering first indicates the year in the Trillium lifespan that the beer was released, followed by a recipe indicator. Brewed at our Fort Point location, Permutation 6.10 is an experimental hybrid that marries the nuanced and crisp flavors of a traditional Belgian Blonde ale with the refreshing vinous profile of Sauvignon Blanc grape must. Permutation 6.10 pours an attractive yellow straw color with a rocky white head and faint shimmering haze that catches the light. Swirling the glass, a lively bouquet of yeast driven aromatics layer classic esters of dried apricot, sharp citrus, and delicate banana on the nose with a gentle touch of crackery malt. Lightly sweet flavors pear and juiced lime wash over the palate delicately accentuated by a whisper of bright white wine and spicy clove. Light in body with a bubbly carbonation and balancing floral bitterness, Permutation 6.10 has a brisk, slightly drying finish pleasing to lovers of beer and wine alike.
