Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew. We name these beers in sequence - their numbering first indicates the year in the Trillium lifespan that the beer was released, followed by a recipe indicator. Brewed at our Fort Point location, Permutation 6.13 is our second foray into foeder aged lagers. The base of this batch was initially lagered for 6 weeks at cold temperatures in our new horizontal oak foeders from Foeder Crafters of America. Pulling and packaging half of the foeder, we released Permutation 84. Then, we blended in a fresh batch of beer and again lagered at cold temperatures in the same foeder for another 14 weeks. Drawing inspiration from the solera method, this process keeps the foeder hydrated as well providing more nuance and complexity of flavor to the finished lager.
Permutation 6.13 pours a light amber color with brilliant clarity and a pillowy white foam. Aromas of honeyed malt and oaky vanilla lift to the nose underpinned by notes of fresh bread dough and biscuits. The palate follows closely deepening with flavors of subtle coconut and white grape and tied together with a delicate noble hop floral accent. Medium body with a soft carbonation, creamy texture and clean finish, Permutation 6.13 is a lesson in patience and proposes that whole is greater than the sum of its parts.
